Instructions
Line a cookie sheet with parchment paper and set a side. Also make sure you have the baking soda measured and ready along with the bacon and the peanuts. Having everything ready is a super important step as you will want to be able to work quickly.
In a medium saucepan, combine the sugar, corn syrup, water, butter, maple extract and maple syrup over high heat. Bring the mixture to a boil and reduce heat to medium stirring occasionally.
Keep an eye on this, Stirring quite often. You want to cook this mixture until its a light brown in color about 10 minutes or so depending on the size of pot you use. Use a thermometer and cook candy until the mixture reaches 290F
When the thermometer reaches 290F turn off heat and stir in the baking soda. this will make the candy puff up a bit.
Very Quickly!! pour the peanuts and the bacon in and stir. then again Very Quickly! Pour the entire mixture on to the prepared baking sheet and spread out thin with a spatula or forks. you want your brittle to be in between 1/4 to 1/2 an inch thick for the best crunchiness. ( Is crunchiness a word? anyways your know what I mean)
Then let the brittle set until completely cool and hard at room temp. do not put this in the fridge. ( Wikipedia says crunchiness is a word but Webster says its not).
When cool. whack it with something and break into pieces, I used a small pink hammer. Then figure out who your favorite people are then decide weather or not you like them enough to share this amazing treat with or hide it in a closet to eat in private so you don’t have to share. the choice is yours. either way Enjoy!
* You want the bacon to be crispy and crunchy so do not under cook it.
