Creamy Tomato Basil Gnocchi Soup
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 (14 ounce) cans fire roasted tomatoes
- 1 cup vegetable broth
- 1/4 - 1/2 teaspoon red pepper flakes, to taste
- 1 cup full fat coconut milk, plus extra, for drizzling on top (optional)
- 1 (16 ounce) package shelf stable mini gnocchi
- 2 cups chopped fresh basil (1 large or 2 medium bunches), plus more for serving (optional)
- Salt and pepper to taste
